Sunday Brunch at Good Life in Boston (and a recipe)

This weekend was my company holiday party in the city. We spent the night in a lovely, gold-tone room at the Hilton Financial District and wandered the neighborhood for brunch this morning.

At Good Life, Mark had the coconut french toast, and I, the peanut butter pancakes topped with rum-sauteed bananas. The pancakes were so yummy - some of the best I've ever had! I can't wait to try making these at home on a lazy weekend morning.

Boston's Best Peanut Butter Pancakes

2 tablespoons sugar

1¼ cups flower

2½ teaspoons baking powder

½ teaspoon salt

1¼ cups milk

1 egg

¼ cup peanut butter

3 tablespoons butter, melted

Combine flour, sugar, baking powder and salt. Beat milk with egg and peanut butter until smooth. Add to dry ingredients and beat just until well moistened. Lightly butter hot griddle. Spoon by ¼ cupfuls onto griddle. Cook until golden brown on both sides.
